When I started this blog, I never intended on having recipes of any sorts! Pictures of pretty food that I ordered out - yes! But... not photos of food I cooked myself! Because... when I started this blog you would have only gotten photos of lean cuisine spaghetti with meat sauce (yes, I am pretty sure I bought out my local grocery store of this every single week)... or photos of cereal (lucky charms are pretty... but not that pretty!) and maybe, if you were lucky you might get something a little bit more advanced... like a smoothie or a yummy salad! That was cooking to me :) I am not sure why I never cooked... I come from a family of excellent cooks! I think it's just safe to say.... it's never fun to cook for just one! But when there are two.... look what I (we) can do :)
Philadelphia Stuffed Chicken
Ingredients:
- skinless chicken breasts
- light philadelphia cream cheese
- fresh basil leaves
- prosciutto
- salt, pepper, italian seasoning
Directions:
I am not sure if I am going to be good at the "directions" part... but basically I first made the stuffing by mixing together the cream cheese with chopped fresh basil leaves (as well as sprinkling some basil seasoning on it). Then we prepped the chicken by slicing it open and seasoning it with italian seasoning, salt and pepper. After that we stuffed the chicken breast with the cream cheese mixture, closed it back up and seasoned the outside of the chicken with the same seasonings (as well as adding a little more basil). After that we wrapped the chicken in prosciutto and put it in the oven at 400* for 20 minutes and voila... a perfect chicken!
I wish I could take credit for the yummy gnocchi we had on the side, but you can get that pre-made at Trader Joes! Pop into the microwave for five minutes and it's done! But I did make the salad... but that isn't difficult, so no need to give directions on that ;)
